The quintessence of the estate, this cuvée, produced exclusively in exceptional vintages, comes from very old vines grown on the finest tuffeau soils of the appellation.
This intense, expressive, and delicate wine combines power and elegance. It is distinguished by its remarkable aromatic complexity and the quality of its finish.

Composition:
Terroir:
Vines aged 90-110 years on the limestone and clay-sand soils of the south-facing slopes of Bourgueil, between the forest plateau and the Loire terraces. Blend of three parcels in Benais, Restigné and Ingrandes-de-Touraine.
Vineyard:
Single Guyot pruning, severe bud removal, manual leaf removal and green harvesting allow us to obtain berries at optimal ripeness.
Harvesting:
Hand-harvested. The bunches are sorted on the vine and then brought to the winery.
Vinification:
Hand-harvested, destemmed grapes are transferred whole-berry by gravity into stainless steel tanks. A three-week maceration period follows. The wine is then aged for 12 months, entirely in 225L barrels (one-third of which are new). The final blend is aged for six months in stainless steel tanks.
Tasting notes:
Beautiful ruby robe. The slightly vegetal nose displays notes of spicy evolution. The palate is punctuated by roasted bell pepper, redcurrants, and delicately peppery spices. This structured wine, with a lovely acidic backbone, is at its peak.
Food and wines pairings:
A gastronomic wine. For cooked and grilled red meats, dishes with reduced and concentrated sauces, game and stews.
Serving: Serve at 18-20°C. Decanting 1 to 2 hours before serving is recommended.
