Terroir:
Vignes de 40-60 ans sur les sols calcaires et argilo-sableux des coteaux de Bourgueil.
Vineyard:
Single guyot pruning, severe bud removal, manual leaf removal and harvesting in order to obtain optimally ripe berries.
Harvesting:
Hand-harvested. The bunches are sorted on the vine and then brought to the winery.
Vinification:
Gravity-fed whole berry fermentation in stainless steel tanks. 3-week maceration. Aged for 12 months: 50% in barrels (half of which are new) and 50% in stainless steel tanks, then blended in stainless steel tanks for 6 months.
Tasting notes:
Garnet in color. The delicate nose offers subtle aromas of red fruit. The palate is fresh, with a lovely acidic structure, firm tannins, and a delicate finish. A wine at its peak.
Food and wines pairings:
Grilled red meats, andouillette sausage, terrines and pâtés, game and stews.
Serving: Serve at 18-20°C. Decanting before serving is preferable.
